blood-orange

Sweeter and darker than regular orange, with a faint raspberry-jam undertone. Think the juice of a Sicilian blood orange: thick, almost wine-like, less acidic than its yellow cousin. Adds a juicy, slightly gourmand opening without tipping into candy. Pairs well with rose, cocoa, and warm spices. Like most citrus, it's a top note: bright for the first hour, then quietly steps aside.
